Happy Tuesday, friends! I hope you had a relaxing Memorial Day Weekend. Mine was busy in all the right ways: OutRun with Amanda (and we got to meet Anne from FANNEtastic Food ←a blogger I’ve followed for a few years now and really admire!) a Nat’s game, sunset drinks on my friend’s roof deck, teaching a great class at Biker Barre, an afternoon at the water park, bubble tea stops, iced coffee walks, and finally figuring out when + how I’m going to make the big move to Seattle this summer.
A highlight of the weekend was this cobbler ↓, which disappeared so quickly that I barely had time to shoot photos of it. This is the perfect summer dessert because it’s easy to make and requires only a few ingredients. The finished product is a juicy, sweet dessert that looks increasingly beautiful the messier it gets.
The key to this recipe is using fresh fruit – I don’t recommend using frozen fruit. If you only have frozen fruit on hand, make sure to thaw the fruit completely before using. You’ll also want to increase the amount of sugar in the recipe to 3/4 or 1 cup.
I love topping my warm dessert with ice cream, so make sure to have some on hand when serving this summertime treat. Also, this tastes great with plain oatmeal if you have leftovers and don’t want to wait until dessert to enjoy it 🙂
