Hi friends! It’s been an absolutely insane week over here, but I wanted to make sure I got a post out before the long weekend. I’m finishing up the 7th week of my clinical internship, and I’m actually really sad that it’s almost over. I’ll try to do a recap after this week (how is it possible that 7 weeks have already gone by since this post?!) Does anyone have plans for the long weekend? So, I have THE BEST salad recipe to share with you. It’s from the lovely Sarah at Simply Real Health, and it was a huge hit at the little gal pal party I hosted at my place. In fact, it was so good that I made it again on Sunday and finished it all within 2 days. Seriously, it’s that good. Think: fresh, tangy, and light, but incredibly nutrient dense and filling. It’s packed with kale, fresh herbs, zesty lemon, and juicy apples. YUM. I made a few adjustments to the original recipe, which are listed below. Enjoy! xo
